Try this:

.property('players.@each.turns.@each')

You could also use the reduce method to calculate totals:

turnCount: function() {
  return this.get('players').reduce(function(value, player) {
    return value + player.get('turns.length');
  }, 0);
}.property('players.@each.turns.@each')
