我的问题是：我怎样才能解析这个，只是为了拥有“实体”属性（只有实体 id=2 名称=红色的行...）？

使用 NSXML 解析器，然后让实体实现 NSCoding 协议。Insider initWithCoder，您将能够获取属性并填充对象。
