如果你不直接切片而是复制内容，结果是可以的

...
>>> c = zeros((a.shape[0],a.shape[1]), dtype=a.dtype)
>>> c[:,:] = a[:,:,0]
>>> cv2.imwrite('out.jpg', c)
True
